One for the Sous Vide Fans
It is often hard to draw the line between tasteful pleasure and maintaining a healthy diet. If you are looking for a meal that features juicy meat but is still within a gluten-free diet, then it is time to try the Bacon and Gruyere Sous Vide Egg Bites. A Sous Vide Supreme Water Oven or an Anova Culinary Precision Cooker
To start putting together the egg bites, you will need the following items:
8 cage-free (pasture-raised) eggs,
½ cup of cottage cheese
6 slices of sugar-free, uncured bacon (cooked and crumbled as bacon bits)
½ teaspoon of paprika
4 ounces of shredded gruyere cheese
3 tablespoons of melted butter
1 tablespoon of melted bacon grease
¼ cup of heavy cream
¾ teaspoon of salt or Vege-Sal
¼ teaspoon of pepper
2 dashes of hot sauce (we recommend our Sauce No. 10)
¼-½ teaspoon of xanthan gum or guar gum (optional choice)
Now that you have all of the right ingredients at your side, it is time to make these bites into a reality. First start by setting the Sous Vide Supreme Water Oven to 170 degrees Fahrenheit. Next, coat the 8 mason jars with (non-sticking) cooking spray. Then you have to place the ½ tablespoon of crumbled bacon bits into each of the jars. Now divide up the shredded cheese into two batches. Divide one batch between the bottoms of the jars.
Place the eggs, salt, cream, pepper, xanthan gum or guar gum, paprika, cottage cheese, and the Hot Sauce No. 10 into the blender. Run the blender until the mixture is well-blended. Pour it into the butter and bacon grease. Be sure to also remove the lid from the blender to let it run for a few minutes to include the air.
Now evenly divide the egg mixture between the jars. Divide the remaining cheese among the jars as well. Just be sure to place the jars on top of the egg mixture. Screw the lids back on, place them into the sous vide, can cook them for 90 minutes. Once they are ready, take them out of the water bath and allow them to cool for a little bit before refrigerating them. If they are refrigerated, you should use about 45 minutes to warm them up in the microwave. If they are room temperature, it should take less time.
